A meat-free knockout way to start the day!

 Olive oil
 6 Tomatoes on the vine
 2 Large portobello mushrooms
 2 Eggs
 Pinch of fresh thyme, sage and rosemary
For the batter
 2 Large eggs
 125 g Plain flour
 50 ml Water
 75 ml Semi-skimmed milk
 Pinch of salt and black pepper



Preheat the oven to 180˚C.


To make the batter, put the flour into a bowl, add the salt and pour in the milk and water. Whisk until combined and then whisk one egg in at a time. Cover and set aside.


Put the Taste & Glory Sausages in a roasting tin and scatter the tomatoes, mushrooms and thyme around the sausages. Drizzle over some oil and roast for 10 minutes.


Remove the tin from the oven, pour in the batter and cook for a further 20 minutes or until puffed up, golden and fully cooked.


Crack the eggs into low parts of the batter and return to the oven for 8 minutes, or until the white has cooked and the yolk is runny.
